Honey-Mustard Chicken Sandwiches

We had some honey-mustard broiled chicken left from last night's salads. So we made sandwiches on the (originally what looked like) whimsical sourdough and swiss purchases.

This is what Rodney did:

Mist one side each of 6 sourdough slices with extra-virgin olive oil using the MISTO. Top with swiss, lettuce, tomato (left from last week), warmed chicken (sliced in half the long way), honey mustard, basil and second slice of bread, dry side down.

I had one sandwich from the half-breast remaining from dinner last night, or today's lunch salad, depending on how you look at it.

Pan fry the sandwiches like a grilled cheese, over medium heat.

Rodney had two sandwiches made up from one whole chicken breast cut in half, obviously chewed on before an image was collected.


These sandwiches were awesome!! Definitely going to keep this sort of thing in mind in the future. I'll have to clean up my cast-iron grill pan so that next time we can get the nice panini grill marks on the bread. Mmm!
