Ginger-Glazed Mahi Mahi



When we shopped for fish at Costco, we went with mahi mahi. I found this recipe on allrecipes.com and it has a ton of positive reviews. I cut the amount of fish by one fillet and ours were about 4 oz rather than 6 each.

Ginger-Glazed Mahi Mahi

3 tbsp honey
3 tbsp soy sauce
3 tbsp balsamic vinegar
1 tsp grated fresh ginger root
1 clove garlic, crushed or to taste
2 tsp olive oil
3 (4-oz) mahi mahi fillets
salt and pepper to taste
1 tbsp vegetable oil

In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil.


Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down.


Cover, and refrigerate for 20 minutes to marinate.


Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork.


Remove fillets to a serving platter and keep warm.


Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistency.


Spoon glaze over fish, and serve immediately.


Zowie, this marinade packs a punch. I was afraid it would be really salty due to the soy sauce, but the honey and vinegar off-set the soy quite nicely. The ginger was very mild and was just a hint in the sauce.

When the fish cooked in the skillet, the marinade on it sizzled and cooked until crispy. I could have used a little bit more oil as the crispy marinade tended to stick to the pan.

All in all though, this was a good recipe, straightforward and quick.

Total: $4.31 or $2.16 for each of two servings.


We had our mahi mahi with pan-seared Brussel sprouts and leftover Colcannon.
