Mashed Sweet Potatoes

I thought I was on the same page as Mark Bittman when it came to the definition of a sweet potato.  When I came across that section of How to Cook Everything and read that sweet potatoes could be mashed potatoes, away I went.

Mashed Sweet Potatoes
adapted from How to Cook Everything, Mark Bittman

2-3 lb sweet potatoes
3 tbsp butter
3/4 c milk, gently warmed
salt
pepper

Peel the potatoes and cut them into about 2" pieces. Add the pieces to a pot of salted water and bring it to a boil.


Cook potatoes until soft, about 30 minutes. Don't poke them too often to check for doneness as they will absorb too much water.

Drain cooked potatoes, return them to the pot placed over low heat, add butter and mash the potatoes.


Add milk and stir into potatoes or continue mashing to desired consistency. Season with salt and pepper as necessary.


Serve immediately.


These were ok. Mashing these sweet potatoes did not do them justice. They were a little wetter than I preferred and didn't taste much different than a steamed sweet potato. Mashing this type of potato wasn't worth it and it won't happen in our kitchen again.
