Originally, the eggs, grilled onions and cheese were going to make up an omelet. As any amateur omelet-preparer knows, omelets often turn into scrambled eggs with goodies mixed in. In my case, I had scrambled eggs with cheese and grilled onions.
Rather than be disgruntled, I warmed a tortilla and plopped the eggs and bacon right inside, then topped the tortilla with salsa. The extra eggs wound up on the side.
Onions grilled/fried in bacon grease totally made this breakfast-for-dinner dinner.
