I needed some diced prosciutto. My experience has only been with prosciutto pre-sliced in paper thin slices.
This time I went to the deli counter of Ralph's and requested a quarter-pound slice.
The Boar's Head piccolo prosciutto was removed from the bag and, after the flappy fat was removed, diced.
