Look! You can buy pancetta in a small dice!
For some reason it makes me think of scrapple, but it's tiny-diced pancetta, what I don't use in the next chicken dish will be fabulous in a frittata!
Citterio Pancetta, available in the deli/meats section at Trader Joe's for $2.99 a 4-ounce package.
